Northeasterly exposure Grape variety : Chenin Average age of vines : 35 ans Yield : 30 hl/ha VINIFICATION Harvest : By hand. 4 selections in the vines (grapes with 100% botrytis.) Vinification : Alcoholic fermentation in oak barrels of 400 litres, Stirring every two weeks Ageing : In 400 litre oak barrels for 12 months (1/3 new barrels, 2/3 , 1 year-old barrels) TASTING NOTES (by Didier Coutenceau - Oenologist) Superb clear, straw-coloured robe Complex bouquet of apricot and quince preserves, smooth, flowery tannins of citrus, tobacco and sweet spices. Beautiful harmony with a full body and structure, velvety, vigorous and long in the mouth. A fine example of its terroir and millessime with excellent potential.
PREPARING AND SERVING Two magnificent wines to drink in company, without food, to savour its essential qualities. These Coteaux de l’Aubance are also a perfect accompaniment to foie gras, white fish in cream sauces. Serving temperature 11°C
CELLARING These wines are perfect to drink now but will develop beautifully over a period of 2 to 20 years
