Northeasterly exposure Grape variety : Chenin Average age of vines : 35 ans Yield : 30 hl/ha VINIFICATION Harvest : Noble Rot, late harvest Vinification : Alcoholic fermentation in oak barrels of 400 litres, Stirring every two weeks Ageing : In 400 litre oak barrels for 12 months (1/3 new barrels, 2/3 , 1 year-old barrels) TASTING NOTES (by Didier Coutenceau - Oenologist) Fabulous bronze nose with topaz tints Complex and generous in the nose, evocative of concentrated crystallized fruits, fruit jellies, turkish delight, nestling in a Havana cigar-box of honeyed floral expressions with notes of sweet spices on a toasted foundation…….pure luxury! In the mouth, these impressions are more than fully confirmed, with a rich, silky, voluptuous texture and a robust but fresh vitality. Enormously long and persistent in the mouth. A delightful treat which provokes unexpected feelings of calm contemplation.
PREPARING AND SERVING Two magnificent wines to drink in company, without food, to savour its essential qualities. These Coteaux de l’Aubance are also a perfect accompaniment to foie gras, white fish in cream sauces. Serving temperature 11°C
CELLARING These wines are perfect to drink now but will develop beautifully over a period of 2 to 20 years
