Climat : Oceanic climate. North-easterly exposure
Grape variety : Chenin    
Average age of vines  : 30 years
Yield : 30 hectolitres per hectare


VINIFICATION         

Harvest : By hand. Selection of grapes partly botryticed.
Vinification :  Pellicular maceration for 12 hours, Alcoholic fermentation, Stirring every two weeks
Ageing : In 400 litre oak barrels for 12 months (3 year-old barrels)                        


TASTING NOTES (by Didier Coutenceau  - Oenologist)

Superb clear, straw-coloured robe
Sophisticated, intense, complex nose with a promise of maturity: acacia honey, apricot preserve heightened by the vigour and elegance of lime and verbena.
Generous in the mouth, smooth at the start, long and aromatic with a silky volume, balanced by a mineral sensation with crystallised white fruits, quince jelly, dried fruits with vanilla achieved during a carefully controlled ageing process.


PREPARING AND SERVING    

The Anjou Blanc Roches des Rochelles is a perfect accompaniment to:
- Scallops
- Plain or lightly smoked fish
- White meats or fish with sauce
- Strong cheeses (e.g. Munster, Pont l’Evéque, Livarot)

Serving temperature 11°C


CELLARING        

This wine is perfect to drink now but will develop beautifully over a period of 1 to 5 year
